Sifu

In kung fu schools, the teacher is referred to as "sifu". I'm wondering if this is a Cantonese word or a Mandarin word, or if it makes a difference?

Kāi dòng

Can someone please translate "Kāi dòng!" to English, and tell me if it is Mandarin or Cantonese?

Thanks!
