As I said, it's probably regional variation. Most of the websites on the internet are going to reflect Hong Kong usage, so I'm not surprised that they don't show up in a Google search.

Pea Sprouts :
"Pea" in the dictionary was translate to "豌豆", in Cantonese, we call it 荷蘭豆/甜豆(ho lan dau/tim dau)

"bean" in the dictionary was translate to "豆", "bean sprouts" in the dictionary was translate to "豆芽", in Hong Kong, we called it to "nga choi",
"Nga Choi" was came form green bean, sometimes we call 芽菜仔(nga choi chai)

Pea as in greenpea is "cheung dau" . Ho lan dou is actually the hulled pea from snowpeas (flat). Tim dau are sweetpeas the hull is round. Different type of peas.

I think bao choi fa is more northern as they call cabbage bao sum choi. Gai laan fa is the name used by the old immigrants to the US. Mostly from Say yup.

Napa cabbage is wong nga bak although many Cantonese use the Say yup name of siu choi.

If anything, I would have thought that 椰菜花 'ye choi fa' is more northern, since the northerners call 'cauliflower' 花椰菜 'hua ye cai'. At any rate, I'm glad to hear that I'm not alone in using the term 芥蘭花 'gaai laan fa'.
