Where Mandarin and Yue use 好才 for "Luckily...", Minnan uses 'heng' 幸.

1. Is the correct word(s) for "lucky/luckily" 'heng' 幸 or 'ho c'ai' 好才?
2. What is the grammatically-correct way to say "Luckily... <something>"?

If you want to use 幸﹐you can say 萬幸 ban hing like mandarin=贏錢真萬幸。
好代得 tai tit/lit (tai is like the hanzi 事志) is used like 好佳哉你沒來。I don't think Penang know hpw to use it.

好在 is from 杜甫 因君问消息,好在阮文瑜===注,好在乃存问之词

ho ka cai is 嘉哉 是嘉之载之省

We usually say ho2-chai2 好采(好在?), sometimes ho2-ka1-cai3 好嘉載, practically never use hing7 幸.
