The Cantonese people I practice with seem to say things differently than what the textbooks suggest. They pronounce "5" as "Mm" (instead of 'ng6'), and "3" as English "sum" (instead of 'saam' or English psalm). Is this common? They come from Papua New Guinea.

Mmmm...
Re: Mmmm...
I think it is quite common, since there are many sub-dialects in Cantonese. such as boat people in Hong Kong, they commonly pronounce a bit different from formal Cantonese. Moreover, 'Ng' consonant has continued to fade out in Hong Kong Cantonese, though not encouraged.
