... when cantonese singers are singing, he/she changes the tones of the words to make it rhyme with the melody of the songs. I just wonder how would people be able to understand what the singers are singing about?

In every Chinese music video (except maybe one or two), there are always lyrics to go with it. If you buy the CD, they'll have the lyrics for you too.

I am afraid that you are having some confusions. It is not true that the cantonese singers will change the tones of the words. In fact, the lyrics are written according to the tones of the melody, i.e. the word with correct sound will only be used for every tone of the melody. That's why the lyricist is having a hard time finding the right words, yet meaningful, to be used for a song.

P.S. only mandarin songs will change the tone of the words to fit the melody, but yet people have already been accustomed to that.
