What does the words "Shou Shu" mean. I am taking a mandarin chinese fighting art and thats what it's called. We also have the same character printed on our shirts. How could I go about finding out what it means??

I believe "shou" in your case means "fist."(I also study martial arts) "Shu"
can mean "book," but that's probably not what it means. I will look it up for you!!!

wushu (kungfu) -> art of war
but what about "changchuan"? It means Long Fist
where do I find the 'shou' or fist in this word?

Wu means martial. Shu means art. So Wu shu means martial arts. Chang means long. Quan (ch'uan is written quan in pinyin) means fist. So Chang Quan is long fist.
