what is 'Try' and 'Test' in Mandarin

how do i say try or test in mandarin.
in cantonese it is "si"

but i heard in mandarin its either shi shi kai or shi, but how would you use "shi shi kai" when it means "try open" but i have heard it used for general "try" before.?

I think it should be "shi shi kan(??看)". That's a phrase meaning "just try it", "try open". "shi" is a better translation for "try". But as you know, It may not have a coresponding word for every single word in two different languages.

in mandarin it is (shì)
