how do you call others by informal names?

I was wondering how do you call an old man, an old lady, a man, and a lady that are a bit older? Do you call the older gentleman a "bak" and the old lady a "poh" while a lady ould be "yi" and man would be a "suk"?

Pretty much right. "grandfather, "grandmother", "auntie", and "uncle" respectively.
