Stumbled across an interesting resource just now: A MANUAL OF THE AMOY COLLOQUIAL by John Macgowan, vintage 1871, annotated by Lîm Kiànhui:

Lim notes which usages are out-of-date, and gives modern alternatives. Some of his notes are pretty detailed, such as explaining that certain phrases are out of use in Amoy but still used among older people in certain parts of the region. Enjoy!
